Choline is manufactured in the body and occurs in a wide range of foods from plants and animals. Foods are supplemented with choline to maintain adequate nutritional intake and as a flavor enhancer. The salt forms of choline (choline chloride and choline bitartrate) are added to many infant formulas. Choline accelerates synthesis and release of acetylcholine, a neurotransmitter necessary for normal muscle control, memory and other functions. It is a precursor of phospholipids that are required in cell membranes, intracellular signaling and removal of cholesterol from the liver.
