Calcium saccharate is a sugar acid derived from D-glucose in which both the aldehydic carbon atom and the carbon atom bearing the primary hydroxyl group are oxidized to carboxylic acid groups. Calcium saccharate, also known as calcium D-saccharate, calcium glucarate, and calcium Dglucarate, is the calcium salt form of glucaric acid, which occurs naturally in a variety of foods including apples, oranges, broccoli, and spinach, and has potential anticancer properties.
