Collagen is a polypeptide substance comprising about one-third of the total protein in mammalian organisms. It is the main constituent of skin, connective tissue, and the organic substance of bones and teeth. The collagen molecule is formed by a triple-helical region and two nonhelical regions at either end of the helix structure, with a molecular weight of approximately 300 kDa, a length of 280 nm, and a diameter of 1.4 nm (2). Therefore, chemical and physical characteristics are not applicable.
