Denatonium is an amino acid amide. Usually available as denatonium benzoate, denatonium is the most bitter chemical compound known. The part of the molecule responsible for the bitterness is the denatonium cation. Several other derivatives including the saccharide and the chloride are also bitter. Denatonium benzoate is approved as an alcohol denaturant in many countries. These alcohols are used as solvents in many cosmetics and consumer products.
