Dimethyl dicarbonate (DMDC), also known as dimethyl pyrocarbonate, is an organooxygen compound. It is functionally related to a carbonic acid. Dimethyl dicarbonate (DMDC) is used as a cold sterilization agent for soft drinks and wines. It has a broad antimicrobial range of action against yeasts, mold fungi, and bacteria. Therapeutic indication data with DMDC have not been located. Dimethyl dicarbonate (DMDC), like diethyl dicarbonate, has broad antimicrobial activity against yeasts, mold fungi, and bacteria. The inactivation of microorganisms has proved to be strongly related to the inactivation of enzymes by protein modification, mainly through reaction with nucleophilic groups (imidazoles, amines, thiols).
