Estragole, a monoterpene, is used as a flavoring agent in ice cream, nonalcoholic beverages, liqueurs, candy, baked goods, and as a fragrance in perfumes, soaps, and detergents. It is also used as an antimicrobial agent against acid tolerant food microflora. It is also used to produce synthetic anise oil, 0.8% in the Vietnamese variety and 5.5% in the Chinese variety.
