L-Glutamic acid is a nonessential amino acid and an excitatory neurotransmitter. All meats, poultry, fish, eggs, and dairy products are excellent sources of glutamic acid. Some protein-rich plant foods also serve as sources. Wheat protein, for instance, contains 30% to 35% glutamic acid.
