Honey (CAS RN 8028-66-8) is a saccharic secretion gathered and stored by honeybees of the species Apis mellifera, Tetragonisca angustula, Scaptotrigona pectoralis, or Melipona beecheii. Honey consists essentially of different sugars, predominantly fructose and glucose as well as other substances such as organic acids, enzymes, and solid particles derived from honey collection. Enzymes in honey include invertase, glucose oxidase, catalase, and acid phosphorylase. Honey is a carbohydrate-rich syrup produced by bees, primarily from floral nectars. Honey is common in food and food products worldwide. Honey can be found in over-the-counter (OTC) cough and cold medications. Currently, there is a Food and Drug Administration (FDA)-approved dermal dressing containing honey used for the management of wounds and burns. Traditionally, honey has been used as an antibacterial, antiseptic, antiinflammatory, and apitherapeutic agent.
