Pumpkin seed oil, or cucurbitae oleum, is the oil expressed form the seeds of the pumpkin, Cucurbita pepo L., Cucurbitaceae, and is identified with the Chemical Abstracts Service (CAS) numbers 8016-49-7 and 89998-03-8. Pumpkin seed oil is the extractives and their physically modified derivatives and consists primarily of the glycerides of C14-18 and C16- C22 unsaturated fatty acids. Typically, the variety C. pepo L. convar. citrullina I. Greb. var. styriaca I. Greb. is used for pharmaceutical purposes because of the thin testa and the soft taste of the seeds. In many countries, seeds of plants of the Cucurbitaceae family are popular for light meals. They are categorized to Cucurbita pepo, Cucurbita maxima, Cucurbita mixta, and Cucurbita moschata according to the pattern and the structure of their branches.
