Sodium dodecylbenzenesulfonate, also known as sodium lauryl benzene sulfonate, is a substituted aromatic compound. The dodecyl radical of sodium dodecylbenzenesulfonate may have many isomers and the benzene may be attached to it at many positions. SDDBS is used as a sanitizer added to fruit and vegetable wash water. SDDBS affects the performance of wash water by improving removal of surface bacteria, reducing the transfer of planktonic bacteria, and lowering the risk of cross contamination. Raw and processed fruits and vegetables are immersed for 90 seconds in water that contains SDDBS and drained prior to further processing and/or serving. The treatment is meant to improve product safety and extend shelf life.
