Sodium octanoate, also known as sodium caprylate, is an organic sodium salt comprising equal numbers of sodium and octanoate ions; the parent compound is the octanoic acid. Octanoic acid (also known as caprylic acid) is a medium-chain fatty acid with 8 carbons (C8) that is naturally found in palm oil, coconut oil, and the milk of humans and some animals. Sodium octanoate is used as a food additive, as a binder or emulsifier to aid in the mixing of ingredients and to prevent caking. In the pharmaceutical industry, sodium octanoate is used as a protein stabilizer in biological preparations. Sodium octanoate is often used in the biological industry for the special breeding selection of bacteria. Sodium octanoate can be used in cosmetics as an emulsifier and surfactant and in the chemical industry as chemical intermediate. There are over the counter (OTC) products with sodium octanoate for veterinary use for frostbite prevention.
